In ABCT5011 Food safety risk analysis, I separate students into groups and each group will pick a food item to work on. Students are asked to do various exercises in class in group and discuss results with rest of the class. Students would build on their scenario through many exercises as the subject progresses.
For example, the first exercise is for them to think of all possible hazard of their food item. The second exercise will ask them to think of criteria to evaluate risk of the hazards. The third exercise requires them to work out risk of each hazard they listed based on severity and chance of occurrence. As they progress through the subject, students would have performed a food safety risk analysis on their food item of choice and they learned through the process.
