Fat in ice cream and other high-fat products causes growing concerns among those health-conscious and those with chronic medical conditions. The food industry is constantly in search of fat replacers that allow more people to enjoy tasty food, without sacrificing their health. The global market demand for fat replacers is substantial, yet there have not been any healthy, standardised and natural alternatives. In light of this, the company developed AkkMoreTM mushroom extract, proven effective in replacing fat in food items, including cookies, mooncakes, and ice cream, without altering their textures or flavours. It also offers many health benefits – it prevents obesity, diabetes, and fatty liver; regulates gut microbiota, stabilises blood sugar levels, and inhibits neuroinflammation. For its achievements, AkkMoreTM won a Silver Award at Geneva International Exhibition of Inventions in 2022, as well as a Gold Award at the Asian International Invention Innovation Exhibition in 2024. Replacing animal-based cream with plant-based AkkMoreTM not only reduces greenhouse gas emissions from cattle farming, but also extends the shelf life of formerly cream-based products, minimising food waste.
