CONFERENCES/SEMINARS/WORKSHOPS
The SHTM's Food and Wine Academy organised several workshops, including the following:
  • Chef Chophet Panklat, Chef de Cuisine, Apsara Cruise, Banyan Tree Bangkok, conducted a Cooking Demo on "Tom Kha King Crab with Young Coconut" on 2 April 2025.
  • Chef Heinz Fischer, Owner, HeinzFischer & Associates; Ms Shirley Lu, Managing Director, China, U.S. Wheat Associates; and Ms Sylvaine Siu, Hong Kong Representative, California Raisin Administrative Committee and USA Cheese Guild presented at the U.S. Ingredients Baking Seminar with Hands-on Workshop on 3 April 2025.
  • Ms Yiting Li, Wine Educator & Marketing Executive, MyiCellar, guided the tasting at the Chinese Baijiu Appreciation Workshop on 7 April 2025.
  • Ms Khem Rai, Wine Educator, MyiCellar, guided the tasting at the workshop "The Three Graces: A Summit of Cabernet, Pinot & Chardonnay" on 10 April 2025.
  • Mr Eric Sautede, Wine Educator, introduced the iconic French wine regions, French wine labels, grape varieties and tips on food pairing and gave a tasting experience on a curated selection of exquisite wines at the "A Journey through France: Exploring the Flavours of French Wines" workshop on 14 April 2025.
  • Ms Olivia Lee, Sommeliere & Founder, Penticton, guided participants in enhancing their sensory skills and cocktail crafting with Cognac, Pineau & Verjus at the "Sip, Study, Stir: The French Spirits Lab" workshop on 22 May 2025.
Dean Kaye Chon delivered a lecture on "Innovations and Leadership in Hospitality and Tourism" to a master's degree class in hospitality management at Sorbonne University in France on 2 April 2025.
Dean Kaye Chon gave a guest lecture on "Innovations and Leadership in Hospitality and Tourism" to students at the University of Ljubljana and the Faculty of Tourism Studies – Turistica at the University of Primorska in Slovenia on 7 and 8 April 2025.
Prof Haiyan Song participated in a discussion panel on emerging issues related to rebranding Hong Kong as an international tourism destination to enhance its competitiveness. This panel took place at the Main Forum II: Hong Kong Tourism Development Forum, World Tourism Cities Federation Hong Kong Fragrant Hills Tourism Summit 2025 in Hong Kong on 14-17 April.
Dean Kaye Chon delivered a public lecture on "Innovations and Leadership in Hospitality and Tourism" at the Wakayama University in Japan on 16 April 2025.
Prof Mimi Li attended the Symposium on Travel Narratives and Place-Making in Beijing, China on 19 April 2025.
Prof Catherine Cheung, Prof Ada Lo and Prof Yitong Yu attended the IHG 2025 Greater China Human Resources Conference in Xian, China on 23-25 April.
Prof Norman Au presented a co-authored paper entitled "Adopting Social Media Influencers in Boutique Hotel Marketing: A Case Study" at the 8th International Conference on Tourism Research in Jyvaskyla, Finland on 24-25 April 2025.
Dean Kaye Chon presented a keynote on "Embracing the Future: Innovation, Sustainability and Human Centric Experiences" at the 6th Conference on Managing Tourism Across Continents in Istanbul, Turkey on 30 April - 3 May 2025.
Prof Catherine Cheung, Prof Ada Lo, Prof Simone Bianco, Prof Wangoo Lee and Dr Ibrahim Mohammed attended the Asian IR Expo & Summit 2025 in Macau on 6-9 May.
Prof Sung Gyun Mun, Prof Henry Tsai, Prof Nelson Tsang, Prof Vincent Tung and Prof Janelle Chan attended the International Conference on Destinations, Events & Sports in Sapporo, Japan on 8-11 May 2025. Prof Mun, Prof Tsai and Prof Tsang presented a co-authored paper entitled "Factors Influencing Tourists' Participation in Value Co-Creation for Nighttime Tourism and Revisit Intentions: The Case of Mianyang Fantawild Oriental Heritage Theme Park". Prof Chan presented a paper entitled "Enhancing Destination Appeal through AI-Generated Imagery: A Bottom-Up Approach in Sustainable Gastronomy Tourism".
Prof Mimi Li attended the 22nd Regional Tourism Development Conference in Luoyang, Henan, China on 9-11 May 2025.
Prof Janelle Chan presented a paper entitled "Visual Futures of Food Marketing: Shaping Consumer Perceptions of Sustainable Food with AI-Generated Imagery" at the Global Hospitality and Tourism Research Summit–Fukuoka in Japan on 15-18 May 2025.
Prof Henry Tsai, Dr Chris Chan and Dr Loretta Pang presented a co-authored paper entitled "Optimizing Hotel Profitability: A Quadratic Revenue Management Model Considering OTA and Direct Bookings" at the 33rd Council for Hospitality Management Education Conference in Colchester, UK on 20-23 May 2025.
Dean Kaye Chon, Prof Jinsoo Lee, Prof Honggen Xiao, Prof Catherine Cheung, Prof Deniz Kucukusta, Prof Ying Wang, Prof YooHee Hwang, Prof Sung In Kim, Dr Emily Chen and Ph.D. student Ms Samantha Xiao attended the 2025 Global ESG Conference in Phuket, Thailand on 23-25 May. Dean Chon delivered the opening remarks. Prof Lee presented a co-authored paper entitled "Exploring Consumers' Environmentally Responsible Behaviour in the Hospitality Industry: Integrating Perceived ESG, VBN, and TPB". Prof Xiao presented a co-authored paper entitled "Contrasting Paradigms in Sustainable Tourism Development". Prof Cheung participated in the pre-conference seminar on "Innovative Data Analytics". Prof Kucukusta participated in the distinguished panel discussion on "Research and ESG: Advancing Knowledge for Sustainable Tourism". Prof Wang and Ms Xiao presented a co-authored paper entitled "Wellbeing for Patients but Discomfort for Others? The Conflict Experience of Stakeholders in Wellness Tourism Destination". Prof Hwang presented two co-authored papers entitled "From Pixels to Palate: How AI-Generated Images Transform Perceptions of Upcycled Food" and "Upcycled Granola or Chips? Unpacking Attributes of Upcycled Food that Drive Purchase Decisions".
Prof Alice Hon presented a paper entitled "The Impact of Intelligent Services on Customer Satisfaction in the China Hotel Industry" at the 8th International Conference on Innovation Management and Entrepreneurship in Hangzhou, China on 23-25 May 2025.
Prof Catherine Cheung participated in the panel discussion on the topic "Co-Creating the Future - A Shared Vision" at the 9th edition of the Luxury Symposium held at Rosewood Hong Kong on 26 May 2025.
Prof Janelle Chan presented a paper entitled "AI-Driven Visual Strategies for Sustainable Business: Transforming Consumer Perceptions in the Food Sector" at the 2025 International Conference on Business, Economics and Management in Taipei, Taiwan on 26-28 May.
