CONFERENCES/SEMINARS/WORKSHOPS
The SHTM's Food and Wine Academy organised several hybrid workshops, including the followings:
  • Ms Tersina Shieh, wine maker/educator, presented the German wine classification system through its most famous grape variety, Riesling, as well as the different faces of the grape and the wine. Tasters of its dry, semi-sweet and dessert wine styles were offered at the "Many Faces of Riesling workshop" on 3 November 2022.
  • Ms Aki Chung, Sales & Marketing Manager, and Ms Candice Ng, Senior Sales & Marketing Executive, Daesang HK Ltd, taught participants how to make kimchi at the Korean Kimchi Introduction Workshop on 4 November 2022.
  • Ms Shieh also spoke about the history of South African wine production, its fair trade and sustainability practices and more about Pinotage, the unique South African grape variety, at the workshop "Wines of South Africa - Pinotage" on 9 November 2022.
  • Chef Paolo Monti introduced different kinds of cheese and salami at the Italian Salami and Cheese Workshops on 15 and 18 November 2022.
  • Swedish Bakery Chef Helen Alnar demonstrated how to make gingerbread, vegan style saffron buns with oat milk, Swedish mulled wine and more when she discussed Swedish Christmas traditions at the Traditional Swedish Christmas Baking Workshop on 30 November 2022.
Dr Anyu Liu, Dr Crystal Shi and Mr Paolo Zhang delivered the SHTM Online Salon cum Info Seminar on 30 November 2022. Dr Liu also moderated a panel discussion entitled "Seize the Day and Look to the Future: Hospitality and Tourism Development in the Post-Pandemic Era".
Professor Haiyan Song spoke on the topic "Predicting Tourism Recovery from COVID-19: A Time-Varying Perspective" at the Symposium on Contemporary Issues in Tourism Economics organised by the University of Macau on 6 December 2022.
The 16th UNWTO/PATA Forum on Tourism Trends and Outlook was held online on 6 December 2022 with the theme "Transforming Tourism: Understanding Trends and Capitalising on Change". The forum was jointly organised by the World Tourism Organization and the Pacific Asia Travel Association, and was co-organised by the Guilin Municipal People's Government and the Department of Culture and Tourism of the Guangxi Zhuang Autonomous Region, in collaboration with the SHTM.

Among the distinguished guests were Professor Kaye Chon who delivered an opening address online; Professor Honggen Xiao and Dr Lisa Gao, who moderated the keynote presentations and panel discussions; Professor Billy Bai, who presented a keynote speech on "Trends, Changes, and Innovations in Tourism"; and Professor Noam Shoval and Dr Nicholas Thomas, who participated in the panel discussion on "Technology Transformation in the Global Tourism Industry".
Dr Tony Tse participated in the online panel discussion "Worlds Best Practices to Enhance the Quality of Tourism Education and Training" at the Human Capital Development Forum 2022 held in Riyadh, Saudi Arabia on 19 December.
