【Alumni Foodie Club】Brew, Aroma & Flavour: The World of Specialty Coffee

The Alumni Foodie Club hosted a well-received specialty coffee workshop at the PolyU SHTM Vinoteca Lab on 9 February, attracting around 40 enthusiastic alumni participants. The session was led by experts Ms Enid Cheung and alumnus Mr Tel Chu, who offered an informative introduction to coffee essentials, from bean cultivation and processing to the ways different roast levels shape aroma and flavour. Participants gained insights into how origin, processing methods, and roasting work together to define a coffee’s unique character. A highlight of the event was the hands-on brewing experience, during which participants picked up practical tips for home brewing and tried manual filter brewing themselves. They also enjoyed a guided tasting of several premium coffees, thoughtfully paired with complementary treats such as candy and chestnuts. The group remained highly engaged throughout the session, actively exchanging ideas and asking questions about flavour profiles and brewing techniques. Each participant took home a souvenir pack of Ethiopian coffee, marking a fitting conclusion to the event. With many expressing keen interest in joining future club activities, these alumni foodies looked forward to further exploring distinctive culinary experiences together.

【Alumni Foodie Club】Taste Together ‧ District Flavors: Aberdeen Harbour Market & Seafood Feast

The Alumni Foodie Club successfully concluded the second chapter of the “Taste Together ‧ District Flavors” series on 13 December 2025, with more than 30 alumni immersing themselves in Hong Kong’s seafood heritage at the Aberdeen Fish Market. The event offered an exclusive behind-the-scenes experience, beginning with an introduction by representatives from the Fish Marketing Organization (FMO). They explained the FMO’s role in providing marine fish wholesaling facilities and clean seawater supply services essential for keeping live fish across its seven markets. The team also shared insights into their daily rhythm, noting that their workday begins long before dawn, with staff waking as early as 2 am to prepare for bustling market operations starting at 4 am. During the Q&A session, alumni eagerly took part in a quiz to win unique hand-drawn posters illustrating various fish species.   Afterwards, the FMO led a guided tour through the vibrant market. Alumni roamed the aisles, observing everything from lobsters and salmon to sophisticated water filtration systems, gaining a deeper appreciation for the modern “tide-to-table” supply chain. The visit ended with a seafood lunch right in the market. Over super-fresh dishes, the group shared stories and discoveries from the tour, making for a lively and memorable meal. With the salty sea air of Aberdeen still fresh in their minds, members are already looking forward to the next stop on their flavourful journey, as the Alumni Foodie Club continues to explore Hong Kong’s diverse culinary landscape one district at a time.
