Coastal Oyster Dinner at GREEN
This winter, GREEN unveiled a refined dining series that celebrates the bold, seasonal flavours of the Pacific Northwest. The dinner menu showcases highlights including Beach Glass Oysters, beach-grown in Hood Canal and polished by the winter storms of the Willapa River – alongside Boston lobster, Australian Black Angus M4+ beef and grilled half lobster with sliced abalone risotto.

After a season of winter storms, Beach Glass Oysters emerge with polished shells and rich, fatty meat. Each bite delivers clean, crisp flavours with notes of nori, scallop and melon rind: a true umami burst balanced by brine that enhances, not overwhelms.
