Outstanding Alumni Award 2024 of PolyU Department of Food Science and Nutrition

The Department of Food Science and Nutrition (FSN) at The Hong Kong Polytechnic University is delighted to announce the recipients of the Outstanding Alumni Award 2024. These awards aim to acknowledge exceptional graduates of PolyU who have excelled in their respective fields, demonstrated active supports, and made significant contributions to the broader community.   We extend our heartfelt congratulations to the following individuals for receiving the Departmental Outstanding Alumni Award:   Award in Scholarly Achievement (Outstanding Young Alumni) Dr Dong Ning ZJU100 Young Professor, Zhejiang University Doctor of Philosophy in Biotechnology (2019) Master of Science in Microbiology (2014) Bachelor of Science in Biological Science (2011) Dr Ning Dong joined School of Public Health, Zhejiang University School of Medicine as a ZJU100 Young Professor under the New Hundred Talents Program in 2024. Her research interests focus on the prevention, diagnosis, and treatment of bacterial infections, which mainly include the genomic epidemiology of infectious agents, antimicrobial resistance (AMR) in clinically important bacteria, development of novel anti-infection strategies, and the application of next-generation sequencing technologies. She was responsible for five research projects in the above-mentioned research directions. Dr Dong has published over seventy papers in leading international journals, including more than 30 first- and corresponding authored peer-reviewed papers published in top journals such as Lancet Microbe, the Lancet Infectious Diseases, Nature Communications, EBioMedicine, Drug Resistance Updates), one of which was selected as ESI Hot and Highly Cited Paper. She is also a peer reviewer for over 30 international journals including Drug Resistance Updates, EBioMedicine, and Journal of Biomedical Science, an associate editor of Frontiers in Microbiology, guest editor of Frontiers in Cellular and Infection Microbiology and guest editor of Genes.   Award in Community Service Achievement (Outstanding Young Alumni) Dr Chen Shanquan, Sandra Assistant Professor (Teaching), The Chinese University of Hong Kong (Shenzhen) (CUHKSZ) Doctor of Philosophy in Food and Nutritional Science (2016) Master of Science in Systems Engineering and Engineering Management (2011) Bachelor of Science in Applied Biology with Biotechnology (2010) Dr Chen Shanquan received a BSc in Applied Biology with Biotechnology from Poly U in 2010, MSc in System Engineering and Engineering Management and PhD in Food and Nutritional Science from The Chinese University of Hong Kong in 2011 and 2016, respectively. She is currently the Assistant Professor (Teaching) in The Chinese University of Hong Kong, Shenzhen. Dr Chen’s commitment to public health began during the Melamine Scandal in China in 2008, when she chose to study food safety in PolyU. As one of the 19 experts (the only one from China) in the WHO Guideline Development Group for traditional food markets, she has played an important role in shaping global food safety standard. Her dedication to improving public health over the past decade has not only improved the food safety level but also enhanced China’s influence on the global stage.   Dr Chen has been a driving force in national works related to food safety and nutrition, especially for the health of our nation’s young population. She is establishing the College Student Health Branch of The Chinese Association for Student Nutrition & Health Promotion, which is under the supervision of National Health Commission. Meanwhile, she worked as the member in developing the Dietary Guideline for Obese Children and Teenagers for National Health Commission, the textbook serials of food education for the children and youth in Guangdong Province and Shenzhen City.   Beyond her technical expertise, Dr Chen has used her professional knowledge to benefit the community. She has been instrumental in popularizing scientific information to exemplify the impact on society.

Academic exchange with Amway China

Academic Visit to Beijing and Tianjin

Our academic team recently embarked on a visit to several academic institutions in Beijing and Tianjin from 27th to 30th May, in order to strengthen our global academic partnerships and uncover new opportunities for collaboration.  During this visit, we had the opportunity to engage in meaningful discussions with several organizations, including the College of Veterinary Medicine, the Institute of Nutrition and Health, and the College of Food Science & Nutritional Engineering at China Agricultural University (CAU). Additionally, our team visited the School of Food and Health at Beijing Technology and Business University (BTBU), and the College of Food Science and Engineering at Tianjin University of Science & Technology (TUST), to explore potential avenues for collaboration further. One of the highlights of our trip was the chance to present an overview of our department's study programs to local students. We also had the honour of witnessing the cutting-edge lab equipment and facilities available at these institutions. We're excited about the prospect of forming academic partnerships with these institutions and attracting students from around the globe to study at PolyU.

FSN Departmental Retreat 2024

The Department of Food Science and Nutrition (FSN) recently hosted its second Departmental Retreat on 6-7 June 2024 in the Tung Chung!  The event was a resounding success, bringing together our field experts for insightful ideas sharing and interactive discussions. We are truly grateful for the participation of our Departmental Academic Advisor (DAA), the Departmental Advisory Committee (DAC), and all our colleagues. This marks a wonderful commencement for our  Department, as we set our sights on strategic planning and development for the future. We're confident that with our young and talented team, we can join hands to nurture future field professionals and create impactful research that will contribute greatly to our society! 食品科學及營養學系於今年6月6至7日在東涌舉行了為期兩天的研討會議! 我們很感恩能夠有學術顧問及系顧問委員會和所有同事的參與,共同為學系的未來發展方針和規劃出謀獻策。  希望我們年輕的團隊可以攜手開創未來 ,培育人才並創造有影響力的研究,為社會做出貢獻!

Jiangnan University Study Trip 2024

[Jiangnan University Study Trip 2024] Jiangnan University Study Trip 2024 was held successfully on 19 - 25 May 2024! A group of 15 BScFST students and 3 FSN staff members joined this trip, together with more than 20 JNU teachers and students. During the trip, our BScFST students engaged in interactive exchanges with JNU students through oral presentations on research, development, and manufacturing of food products, artistic Agar Plate Microbial Culture Competition 🔬, and a series of other exciting activities. They visited industrial factories, museums, advanced future food research laboratories, and pilot production plants to learn more about different food technologies and traditional villages in the Jiangnan areas, making the exchange trip truly fruitful and enjoyable.   [江南大學交流團2024] 江南大學交流團2024於2024年5月19至25日完滿舉行! 是次活動由3位FSN老師帶隊,共有15位食品安全及食品科技(榮譽)理學士(BScFST)同學與20多位江南大學(JNU)教師和同學參加。我們的同學通過學術演講與江南大學的同學在科研與創業方面進行了深入的交流,並參加了藝術性的瓊脂培養基微生物競賽🔬。同學們亦参觀了當地不同的食品廠、博物館和先進的未來食品研究實驗室、中試基地,以了解不同的食品科技。除此之外,學生們也領略到江南地區的傳統文化,在今次豐富多彩的交流活動中收穫滿滿。

FSN Researchers Develop AkkMore™: The Novel Fungus-based Fat Replacer Enhancing Gut Health and Combating Obesity; Collaborates with Hotel ICON to Launch Reduced-fat Desserts to Promote Environmental Innovation in Food Industry

Our research team led by Dr Gail CHANG and Dr Amber CHIOU has developed AkkMore™, a fungus and plant-based fat replacer against obesity and metabolic diseases. AkkMore™ is not only effective in enhancing gut health, modulating the immune response, and relieving anxiety, but also helps to lower the calorific content of food and extends the shelf life of cream products. The research was awarded a silver medal at the 2022 International Exhibition of Inventions Geneva. Leveraging the thickening, emulsifying and stabilising properties of AkkMore™, our team has also developed Cream Mate, an AkkMore™-based cream substitute. Cream Mate can be used in desserts to reduce the amount of traditional cream required, resulting in lower fat and calorie content while maintaining taste and texture, but also significantly extends the shelf life of cream-based products. This breakthrough has far-reaching implications. By reducing the consumption of dairy products and minizing food waste, we contribute to reducing carbon emissions and enhancing the profitability of production processes. At PolyU, we are dedicated to translating our research outcomes into practical applications. Supported by the PolyU Micro Fund and the GBA Startup Postdoc Programme, Dr Gail Chang has partnered with Dr Amber Chiou and Dr Jimmy Jin (Assistant Dean of the Faculty of Business) to establish Bo InnoHealth Biotechnology Company Limited in 2020. This start-up focuses on further research into the growth mechanism of fungus and has received generous support from the PolyU Tech Launchpad Fund and multiple angel funds. In collaboration with GREEN of Hotel ICON to incorporate Cream Mate into reduced-fat soft serve and desserts, we are proud to present the "ForestFit Afternoon Tea With Japanese Fruit And AkkMore™", a limited-time menu from 3 June until 1 September 2024.
