CONFERENCES/SEMINARS/WORKSHOPS
The SHTM's Food and Wine Academy has organised several workshops, including the following:
  • Mr Vanessa Wu, Greater China Market Manager, New Zealand Winegrowers, and Mr Billy Law, Business Development Manager, New Zealand Trade and Enterprise, gave an overview on New Zealand wine and its sustainability focus at a workshop entitled "Altogether Unique – New Zealand Wine" on 2 November and 1 December 2023, respectively.
  • Ms Yiting Li, Wine Educator & Marketing Executive, MyiCellar, and Mr Haoyu Zhang, Zhenjiu Brand Ambassador, ZJLD Group, guided the tasting of two varieties of Zhenjiu and a blind tasting of another baijiu at the "Baijiu (Chinese Spirits) Appreciation & Blind Tasting" workshop on 7 November 2023.
  • Ms Anushka Purohit, Co-Founder & Chief Executive Officer, and Mr Naman Tekriwal, Co-Founder & Chief Operation Officer, Breer Hong Kong, taught participants how to enjoy Bolo Bao IPA (Pineapple Bun Beer) while sustaining the planet at the "Upcycled Food Workshop" on 8 November 2023.
  • Chef Paolo Monti, Chef Patron & Owner, AMA Ristorante by The Amatricianist, introduced different kinds of Italian salumi and cheese at the workshop "Week of Italian Cuisine in the World" on 13 November 2023.
  • At the "Traditional Swedish Christmas Baking Workshop" on 28 November 2023, Bakery Chef Helen Alnar taught participants how to bake the perfect saffron buns, gingerbreads, and Christmas butterscotch, and talked about the non-alcoholic mulled wine Glögg.
  • Mr Enrico Ho, Vice President, Hong Kong Bartenders Association, guided the tasting at the "Italian Spirits & Cocktail Workshop" on 30 November 2023.
  • Ms Laura Wong, Sake Sommelier, Event & Marketing Executive, MyiCellar, shared the knowledge on sake production and guided the tasting of four various styles of sakes at the workshop "An Afternoon of Japanese Elegance" on 5 December 2023.
Professor Cathy Hsu, Dr Neil Li, Dr Jaehee Gim, Dr YooHee Hwang, Dr Michael Lin and Dr Emily Chen attended the 3rd Global Congress of Special Interest Tourism & Hospitality in Macau from 10 to 12 November 2023.
  • Professor Hsu delivered a keynote speech on the topic "TOUROMETER: A Social Listening Tool for Tourism Policy and Strategy Formation".
  • Dr Li presented two co-authored papers entitled "Time- and Feature-Variating Combination Forecasting of Tourism Demand: An Ensemble Learning-Based Meta-Learner Method" and "Utilitarian vs. Hedonic Value: Impact of Hotel Cover Picture Content on Customers' Willingness to Pay".
  • Dr Hwang presented a paper entitled "Why Should We Try Upcycled Food? Cross-Country Examinations into Upcycled Food Consumption".
  • Dr Lin presented a paper entitled "R&D Effectiveness of Domestic Midscale Chain Hotel Brand: An Exploratory Study".
  • Dr Chen presented a paper entitled "A Flow-Based Indicator to Analyse and Understand Tourist Mobility: The Case of the Greater Bay Area".
Dean Kaye Chon gave a speech entitled "Managing Overtourism: The Hong Kong Experience" and participated in the panel discussion "UNWTO Affiliate Members: Leading Sustainable Tourism Projects" at the Seoul Sustainable Tourism Conference 2023 in Seoul, South Korea on 16-17 November 2023.
Dean Kaye Chon delivered a special lecture entitled "Your Career in Asia's Century of Tourism and Hospitality" at Kyung Hee University in Seoul, South Korea on 17 November 2023.

Dean Kaye Chon delivered two distinguished lectures on "Your Future in Asia's Century of Tourism and Hospitality" at the School of Tourism Management, Sun Yat Sen University and Shenzhen Tourism College, Jinan University on 22 and 23 November 2023, respectively, with the support of the Katie Shu Sui Pui Charitable Trust.

Dean Kaye Chon delivered a keynote address entitled "Shaping the Future of Hospitality and Tourism in the Post-Pandemic Era" at the Mini Forum in Bangkok, Thailand on 28 November 2023. This was followed by a panel discussion entitled "Hospitality and Tourism Management: Navigating Success in a Changing World" chaired by Ms Wimintra Raj, Founder of Hotelintel.co and Director of Government Affairs and Public Relations of NFQ (Thailand), with the participation of:
  • Mr Chattan Kunjara Na Ayudhya, Deputy Governor for International Marketing (Asia and South Pacific), Tourism Authority of Thailand
  • Dr Poolsak Koseeyaporn, Vice President, Directorate of Innovation Strategy in Higher Education and High-skilled Workforce, Office of National Higher Education Science Research and Innovation Policy Council
  • Ms Piangduan Kloyarun, Vice President, The Salil Hotel Riverside – Bangkok
  • Mr Siradej Donavanik, Vice President – Hotel Business Development, Dusit Thani Plc.
  • Dr Pipatpong Fakfare, Assistant Professor, School of Humanities and Tourism Management, Bangkok University
  • Dr Arinya Pongwat, Lecturer and Director of Chiang Mai University Corporate Communication and Alumni Relations Centre, Chiang Mai University
Dr Catherine Cheung and Ph.D. student Ms Danni Wang presented a co-authored paper "A Glass Half Full or Half Empty? An Exploratory Study of Career Optimism and Adaptability of Hospitality and Tourism Student Interns" at the eLearning Forum Asia 2023 in Singapore on 30 November and 1 December 2023.
Dr Linda Woo and Dr Ada Fong attended the 38th Annual Conference of the Japan Institute of Tourism Research in Tokyo, Japan from 8 to 10 December 2023. Dr Woo presented a paper entitled "Shared Kitchens as Innovation Drivers for the Community". Dr Fong presented a paper entitled "The Impact of Cultural Distance on Tourist Behaviours in Hong Kong".
