CONFERENCES/SEMINARS/WORKSHOPS
Professor Kaye Chon delivered the opening remarks online and participated in an online plenary session on the topic "Fresh Constructs to Hospitality Learning and Education" at the APacCHRIE Conference 2021, hosted by SHATEC in Singapore on 2-4 June.
Under the Internationalisation@Home initiative, the SHTM's Food and Wine Academy has organised several online workshops, including the following:
  • Bakery Chef Helen Alnar taught participants how to make a perfect cinnamon bun and talked about the Swedes' love of sweets, pastries and fika in the workshop "The Art of 'Fika' and the Perfect Cinnamon Bun" on 2 June 2021.
  • Chefs Brian Magill and Thomas McCluney from South Eastern Regional College demonstrated the process of making traditional Irish breads and explained how to expertly incorporate them into imaginative, restaurant-quality recipes in the online workshop "Taste of Northern Ireland – A Demonstration of Traditional Irish Flavours Combined with Contemporary Techniques and Presentation" on 11 June 2021.
  • Chef Stefu Santoso, Executive Chef of Aprez Catering and Former President of the Association of Culinary Professionals Indonesia, presented on Indonesian cuisine in the online workshop "Discover the Wonderful Indonesian Cuisine" on 21 June 2021.
  • Mr John Rhodes, Whiskey Expert, spoke on the history and craftsmanship of Irish whiskey in two wine masterclasses entitled "Discover Irish Whiskey" on 21 and 24 June 2021.
  • Mr Valentin Maurel, Co-founder of Vines and Terroirs Ltd, presented on the heritage, production and worldwide business of Rosé Wine in a wine masterclass entitled "Chateau d'Astros – The Heritage of the Rosé Wine" on 25 June 2021.
  • Mr Christopher Beros, California Wine Institute Asia Director, and Ms Elaine Chukan Brown, Wine Writer, spoke about California's wine regions and varietals in two wine masterclasses entitled "Reds and Whites of California" on 5 and 8 July 2021.
  • Ms Ivy Ng, Bourgogne Wine Ambassador, presented on the Bourgogne wine region in France in two wine masterclasses entitled "Discovering the Red & White Wines of Bourgogne" on 6 and 7 July 2021.
  • Mr Gregory Silva, CEO of Le Petit Beret Asia, introduced an innovative beverage between wines and juices category in an online workshop "Combining Non-Alcoholic Wines with Food: A Sensorial Experience" on 14 and 15 July 2021.
Professor Haiyan Song gave an online keynote presentation entitled "Tourist Travel Choice amid COVID-19" at the 5th Hospitality Finance & Economics Conference, hosted by Ecole hôtelière de Lausanne on 30 June - 1 July 2021.
Professor Song also conducted a special lecture on the topic "Tourism Economics Research – Possible New Directions amid/post COVID-19" at the APTA 2021 Online Conference on 30 June - 3 July.
Dr Dan Wang delivered an online course entitled "Innovation and Technology Management in Tourism and Hospitality" to the teachers and students of the University Alliance of the Silk Road (UASR) at the UASR Virtual Summer Courses 2021 on 19-30 July 2021.
Professor Brian King joined the online Advisory Council Meeting for Corporate Travel Community on 21 July 2021 which is chaired by D.HTM alumnus Dr Benson Tang, Executive Director of Corporate Travel Community.
