: Connecting Hotel ICON: Developing Multi-Disciplinary Learning Experiences and Reusable Educational Resources

Pilot Student Projects

Description

A total of 10 pilot joint projects have been executed in several subjects offered by different departments, including ABCT, COMP, ENGL, ITC, SD and SHTM: (1) HTM3130 Food & Beverage Operations I and ABCT008 Project; (2) HTM3144 Special Topics in Convention and Events, HTM4117 Special Event Project I and COMP311 Foundation of Database System; (3) HTM4005 Environmental Management in the Hospitality Industry and ITC4692 Final Year Project; (4) HTM4103 Food & Beverage Management and ABCT4003 Water & Waste Management; (5) HTM4118 Special Event Project II, COMP320 Introduction to Internet Computing and ENGL304 English for Administration; (6) HTM4118 Special Event Project II and ENGL317 English for Technical & Web-based Writing; (7) HTM4102 Hospitality Facilities Management & Design and ITC3105 Textile Product Development; (8) HTM3130 Food & Beverage Operation I and ABCT4014 Food Processing II; (9) HTM4117 Special Even Project I and Foundations of Database System; (10) HTM4117 Special Event Project I, SD3102 Interactive Programming and SD4761 Information & Communication.


Example of Application

(1) HTM3130 & ABCT4003
HTM3130 students were preparing and serving good in the Bistro 1979 training restaurant. The whole class was responsible for the restaurant operation. ABCT4008 students took notes of the issues and their concerns in regards to the environment of the food production lab of Bistro 1979, as well as discussed with the HTM3130 students samples taking during their first site visit to the food production lab. The ABCT students then made a second site visit to the food production lab for samples including water, bacteria samples on students’ hands, raw material, semi and finished food product for laboratory tests. After a series of lab tests
and studies, their findings and suggestions were presented to the HTM3130 students for future improvements during an interactive seminar.

(2) HTM3114, HTM4117 & COMP311
HTM4117 students were assigned to organize the 11th Asia Pacific Forum for Graduation Students Research in Tourism (APF) and The International Convention & Expo Summit 2012 (ICES). The ICES2012 & APFGS2012 conferences were real conferences held in 22-24 May, 2012 in Hotel ICON. The whole class formed the organizing committee of the two conferences. In the project, HTM4117 students were the customer looking for new Information and Communication Technology (ICT) tools to better manage their upcoming events. Two groups of HTM3144 students had chosen Technology in Conventions and Meetings as
their term project topics. These HTM3144 students acted as systems’ liaisons in the project. They needed to communicate with the customer and collect the business requirements. After their own discussions and deliberations, they converted the business requirements into the system requirements and then passed them to the COMP311 students, the developers, who needed to develop a database application as the final product.

(3) HTM4005 & ITC4692
HTM4005 students need to focus on three main categories of textile used in hotel which are textiles for bedding, bathroom and furnishing. They discuss 3Rs (reduce, reuse, recycle) concept in the hotel industry and give recommendations based on knowledge obtained from this subject. While ITC4692 students studied the linen, towels, bathrobes and other textile materials from Hotel ICON and found out the specification of fabrics used in the hotel industry from textile technology perspectives. ITC4692 students also shared their knowledge in textiles with the HTM4005 students as one of the inputs for their project. During the interactions, both groups of students exchanged knowledge from different fields of study and achieved the project objective which is providing a multi-disciplinary learning experience to students integrated with the Hotel ICON.

(4) HTM4103 & ABCT4003
Site visits and guest lectures by the Chief Steward of Hotel ICON were arranged to give both groups of students a better idea of food and beverage operations and waste management system used in Hotel ICON. ABCT4003 students developed a waste management plan for HTM4103 students to implement in their dinner event operation.

(5) HTM4118, COMP320 & ENGL304
HTM4118 students, the organizing committee of the 11th Asia Pacific Forum for Graduation Students Research in Tourism (APF) and The International Convention & Expo Summit 2012 (ICES), requested several promotion games which could align with the themes of Hong Kong tourism, the two conferences and the Food and Beverages. HTM4118 and COMP320 students met twice during the semester in teams with 5 to 6 students to develop online mini-games while the ENGL304 students took the meeting minutes during the meetings.

(6) HTM4118 & ENGL317
ENGL317 students helped HTM4118 students to review their conference website Through this collaborative exercise, ENGL students got the chance to build up their competence on web-based writing. HTM4118 benefited from the comments and suggestions provided by ENGL317 students.

(7) HTM4102 & ITC3105
HTM4102 students learned through a hotel site visit and interviewing Hotel ICON staff in order to understand the current use of textile products and the standard and requirements of those products used in Hotel ICON. They found out that fire-resistance is the most important area of concern.ITC3105 students developed a new textile product by using new technologies in textile products alongside with HTM4102 students’ contribution.

(8) HTM3130 & ABCT4014
All students from both subjects paired up to form 8 different multidisciplinary groups. Each group had 3-4 students from ABCT and 6-8 students from SHTM. HTM3130 students were responsible for producing food for the ABCT4014 students to use for canning and sealing. Based on the food samples given, ABCT4014 students needed to can and seal the food samples and examine the food samples afterward. Each multidisciplinary group delivered a joint project presentation. In the presentation, each multidisciplinary group outlined the preparation and cooking of the food as well as the canning process and final product
examination results.

(9) HTM4117 & COMP311
Special Event Project I (HTM4117) students organized the 8th China Tourism Forum (CTF). To better manage the event by applying Information and Communication Technology (ICT), HTM4117 students acted as clients who gave out the requirement lists. COMP311 students acted as development consultants and developers, helping to develop a computer system/program application on the requirements provided by HTM4117 students. Students divided into groups. Each group made a business requirement list based on the 8th CTF by selecting one of the systems listed below:
- Registration and Attendance Managing System
- The Paper Submission Management System
- The Paper Review Management System

(10) HTM4117, SD3102 & SD4761
Special Event Project I (HTM4117) students organized the 8th China Tourism Forum (CTF) from 16th to 18th May 2013 at the Hotel ICON. Students of HTM4117 setup a website for the event. To make the website more attractive, they wanted to include some interactive games (SD3102) in the website and information kit prototypes (SD4761) to promote Hong Kong’s tourism, China, food and beverages and/or the conference venue. In order to achieve this goal, students from HTM4117 and SD3102/ SD4761 worked together to produce an interactive game/ information kit proposal containing the concept, feature, setting and storyline, target audience, etc. HTM4117 students narrated the forum details; SD3102/ SD4761 students focused on the
interactive design. Presentations and group discussions were organized during the semester.
