Master Chef: Pastry at its Best

Experience culinary education and cooking professionally first-hand under the tutelage of expert Executive Pastry Chef Danny Ho at Hotel ICON!


Whether you are a hospitality professional wishing to polish your pastry skills or an independent business owner wanting to diversify your range of pastry options in your shop, this course will have something for you.  Malaysian Chef Danny Ho will share the pastry techniques learned from his intensive master training in France.


These sessions will allow participants to learn everything from pastry essentials to Chef Danny’s unique insights, while savoring delicious bites during lunch with passionate Chef Danny at Hotel ICON’s GREEN.

This course aims to provide skilled training for those who wish to improve their competencies and to develop their artistic talents as a professional pastry chef. Participants completing the two sessions will receive an official certificate from the Food and Wine Academy.

Course Outline:

Session 1:  Introduction to wedding cakes  

-Introduction to sugar fondant
-Lemon poppy seed sponge cake base
-Low sugar butter cream

Session 2:  New techniques in flowers making
-Techniques in making roses (sugar fondant )
-Techniques in making ribbon (sugar fondant)
-Techniques in royal icing piping

 

Language: English (Complemented with Mandarin and Cantonese)

*Chef Danny Ho is known for his mastery of French pastries. His sugar showpieces won the Gold with Distinction Awards in Pastry Professional Showpiece in Hong Kong International Culinary Classic 2011, Gold Award in Pastry Display in the Hong Kong International Culinary Classic 2007 and also won Medalistin Pastry Showpiece. With talent and tenacity, Chef Danny oversees all pastry and bakery operations at the hotel.

Terms & Conditions: 1. Unless workshop is cancelled by the Food and Wine Academy (FWA), all payment received are non-refundable and no-shows will be charged full payment. 2. Payment must be made at least 3 days before the workshop and can only be refunded if cancellation is submitted via email at least 4 days before the workshop. 3. The FWA reserves the right to change any terms and conditions without prior notice. Any disputes relating to the workshop shall be decided by FWA, whose decision shall be final and conclusive. 4. Adverse Weather Arrangement: Workshop will be cancelled if Typhoon Signal No. 8 or above, or black storm warning is raised within 2 hours before the start of workshop. In case of cancellation due to adverse weather, full refund will be given.
